Healthy Oatmeal Muffins

These muffins are low in calories and packed with energy.  It is the perfect breakfast or the perfect snack when you are on the go.


-    3 cups of rolled oats

-    2/3 cup brown sugar

-    2 t ground cinnamon

-    2 t baking powder

-    1 t salt

-    ¾ cup milk

-    2 large eggs

-    ½ cup applesauce

-    2 t vanilla essence

-    ¾ cup of flavoring (fruits like berries, sliced banana or strawberries or dried fruits can be used)


Preheat your oven to 350o F.  Mix together all wet ingredients and beat in dry ingredients slowly.  Add flavoring of your choice.  Scoop the mixture into pre-greased muffin pan.  Sprinkle extra flavoring on top and bake for 25-30 minutes until set.

Breakfast Egg Muffins

These muffins are best served hot and can also be enjoyed as a healthy power lunch if you are on the go or in need of a meal that will keep you full.


-    Spinach

-    Sausage

-    4 eggs

-    1 ½ tbsp milk

-    ¼ t baking powder

-    Pinch pepper

-    ½ t salt

-    1 tbsp olive oil

-    Cheese for topping


Preheat oven to 350o F.  Whisk eggs together and add salt, pepper, olive oil, baking powder, and milk.  Chop spinach and sausage and include the mixture.  Add to muffin pans and top with cheese.  Bake for 20 – 25 minutes.
